Mint Chocolate Brownies (Gluten Free)
Anyone who knows me in real life knows I love to bake. I've been experimenting with gluten free recipes for a friend. Some non-wheat flours have a metallic taste, so I wasn't sure how this would turn out. I'm happy to say these mint chocolate brownies are really good. I might have splashed a little too much mint in the frosting, but the flavors should marry better after sitting in the fridge overnight. The texture is chewy where it's supposed to be and I bet I could pass these off as "regular" brownies. I'll let you know if they pass the test!
